Halloween is nothing without a jack-o'-lantern. But the irony is that not much people are aware about the symbolism of it for them its just a carved pumpkin placed on the doorstep or porches of houses on Halloween.
The tradition of decorating houses by a jack-o'-lantern is based on an Irish folktale.
As the story goes, there was a man named 'Stingy Jack', who once invited the devil for a drink but didn't wanted to pay; he convinced the Devil to turn himself into a coin so that Jack could pay for the drink and as soon as the devil did so he decided to keep the coin and slid it into his pocket next to a cross, so that the devil wouldn't change back to his original form. He freed the devil, eventually but on one condition that the devil won't bother him for a year and in case he died, he won't claim his soul. The next year when the devil visited Jack, he again tricked him. Soon after Jack died and God refused to take him into heaven and since the devil couldn't claim his soul and had a history with him, the devil sent off Jack into the dark night with just a burning coal to light his way. The coal was not enough to lite the way so Jack carved-out a turnip and put the coal inside it and its said that since then he's been roaming the earth. And hence, the name!
Initially, people used to carve scary faces into turnip, potatoes or large beets to scare Jack away but when these people immigrated to the US they realized that pumpkins would make perfect jack-o'-lanterns and since then on every Halloween night people have been placing a carved pumpkin near their doors or on their porches to scare Jack away.
